Jim:Thank you. Wow,I love the shoyu and the kombu dashi soup stock in it.

Takeda:Yes. This noodle dish is prepared with lots of soy sauce,which is known as shoyu in chaste Japanese.Chukamen noodles,garlic,fresh ginger,sesame oil,chicken soup stock,kombu dashi soup stock,sake,salt,sugar,and soy sauce are used to make this dish.

Jim:I find Japanese noodles are all delicious and healthy. They aren't as heavy as pasta,usually use vegetable or fish to prepare,very healthy.

Takeda:That's true. We have different type of noodles,like ramen,soba, shirataki,udon,somen.Most noodle dishes are prepared with ingredients such as dashi,shoyu,mirin.Eggs,chicken,fish and vegetables are used in many variants.

Jim:Japanese noodles are great!

Japanese noodles have gain major popularity outside of Japan,especially with the recent boom of Sushi in the last 5 years. Much like rice,noodles are a staple and often used as a focal point in many Japanese dishes.In Japan's towns and cities,noodle shops can be found at every corner.

Contrary to popular belief,Japanese noodles can also be served cold with variety of dipping dishes,but more frequently used in hot and cold soups,accompanied by healthy ingredients such as mushrooms,meats,fish,kelp and so on.
